The Best Summer Ever

Summer Vacation

As a small business owner, you can feel it's almost impossible to take time away from your company. It feels like you can't afford to go on vacation, especially when you're in charge of your company operations, and so many people depend on you.   But you need to protect yourself from burn out.  You can't afford to take time off.

Summer should never be long and boring.  It is a time for exciting adventures and the great outdoors.  Get ready for a road trip.  But the biggest goal is to get out of the house, especially the kitchen.  Even if its to the hammock in the back yard in the evening.  Make some sun tea, enjoy the warm breezes and watch for the clouds that bring in the thunderstorms.  When the heat gets too thick, look for some cool shade or escape to the mountains or the beach.  It’s all about picnics and potlucks.  And for real summer nostalgia, find a drive in movie. 

Independence Day

Independence Day celebrates the birthday of the United States of America. Founded July 4th 1776, with the signing of the Declaration of Independence.  The 4th of July is a time for the Red White and Blue. A time for Picnics, Parades and Marching Bands   

Picnic in the Park
Fried Chicken
1 three-pound chicken, cut into 8 pieces
1 teaspoon salt
1 ½cups all purpose flour
1 teaspoon black pepper
Pinch of ground cinnamon
1 cup whole milk or buttermilk
Oil for frying
Soak chicken overnight in ice water. Pat dry and sprinkle with salt. Season flour with pepper and cinnamon. Toss chicken pieces in flour, and let dry.  Pour milk into a shallow bowl, and dip chicken pieces into milk. Coat the pieces again with flour. Heat oil in a skillet on high. Brown chicken in the skillet on both sides, starting with the meat-side down and turning frequently. Lower heat, cover skillet, and cook for 10 to 20 minutes. Remove cover, raise heat, and fry until chicken is crisp on both sides.    Remove from skillet, drain and cool.
Baked Beans
2 (16 ounce) cans baked beans with pork
¼ cup molasses
¼ cup chopped onions 
4 tablespoons brown sugar
1 tablespoon prepared mustard
2 tablespoons ketchup
2 slices bacon, chopped
Preheat oven to 350 degrees F.  Mix baked beans with pork, molasses, onions, brown sugar and ketchup together and put in a greased casserole dish. Top with bacon, cover and bake for 3 hours.
Potato Salad
3/4 cup Mayonnaise
1 teaspoon Mustard
6 cups cubed cooked potatoes
2 hard-cooked eggs, chopped
1/2 cup sliced celery
1/2 cup frozen peas, thawed
1/4 cup chopped onion
Salt and pepper
Mix mayo and mustard in large bowl. Add potatoes, eggs, celery, peas and onion; mix lightly. Season to taste with salt and pepper. Refrigerate several hours or overnight.

Company picnics come in all shapes and sizes. As you begin planning yours, think about what you want your event to accomplish. Do you want to formally thank current and retired employees and their families? Are you hoping to give your employees a chance to get to know each other in an informal setting? Or do you want to give your employees a chance to spend some quality time with their families?

For the kids – Don’t forget the ribbons printed with the date and name of the annual company picnic on them.  Hopping bag races, two legs tied together race, and the potato in a spoon race.  Everyone should get a ribbon, so break down into age groups.

Uncle Sam

No one is sure how Uncle Sam was created.  During the War of 1812, shipments of supplies to the US Army were stamped with US, which turned into Uncle Sam.  The most famous portrait of Uncle Sam is the "I WANT YOU" Army recruiting poster from World War I.

Sangria

Sangria is typically created from red wine, fruit juices, soda water, and fruit. When making your own Sangria, use a good quality red wine, and be sure to let it chill overnight. In the morning, pour into a pitcher full of ice cubes, garnish with fresh fruit, and enjoy.




Smokey the Bear

In the 1950s, a bear cub escaped a forest fire climbing up in a tree. By the time the fire fighters found the cub, the forest was charred and blackened. The firefighters, park forest rangers and the warden named him Smokey. They sent him to live in the National Zoo in Washington, D.C.


Watermelon

1.  Choose one that is free of bruises, cuts and dents.
2.  Watermelon should be heavy.
3.  The underside should have a yellow spot from where it sat on the ground.
